Nach der manuellen Ernte, mit einem Ertrag von 30 Hektolitern pro Hektar, werden die unentrappten Trauben einmalig mit 20 bis 40 mg geschwefelt und dann mit einer traditionellen vertikalen Coquard
Die Trauben kommen aus einer 1,5 Hektar großen, südwestlich orientierten Parzelle mit lehmigem Kalkboden. Die Rebstöcke wurden im Jahr 2000 gepflanzt und werden nach den Prinzipien der Biodynamie bewirtschaftet. Das Weingut selbst ist Demeter-zertifiziert. Nach der manuellen Ernte, mit einem Ertrag von 30 Hektolitern pro Hektar, werden die unentrappten Trauben einmalig mit 20 bis 40 mg geschwefelt und dann mit einer traditionellen vertikalen Coquard Presse gepresst. Die Gärung und der Ausbau finden ohne Zusatz von Hefen in 228 und 400 Liter Holzfässern statt. Der Wein bleibt für acht bis zehn Monate im Fass und durchläuft eine malolaktische Gärung. Ein Abstich erfolgt nach Bedarf und der Wein wird unfiltriert und ohne Dosage abgefüllt. Die jährliche Produktion liegt bei 3.000 bis 4.000 Flaschen.

A worthy product.
This is a great little grinder. I roast my own beans, grind normally with an electric, and brew with Aeropress. This is for travel.... Light, compact, not used everyday, and easy to clean. Works just as expected. My only less than 5 stars comment is absent guidance on reassembly after cleaning and a washer fell out. Customer support was 5 star in guiding me. Well done Simcoker!
