Die Eigenschaften der Olivenbaum der Sorte Frantoio sind 100% mediterran. Daraus entstehen sehr scharfe, aromatische  und fruchtige Olivenöle, nur leicht bitter dafür aber mit einer gewissen "Chilli-Schärfe".

Mittlere aromatische Intensität. In der Nase finden wir feine florale Noten, ergänzt durch Aromen nach Mandel, Zitrusfrüchten und Apfel.
