Dies trifft aber überhaupt nicht zu. Die Konsistenz ist zart und der Geschmack ist äusserts intensiv. Dies aufgrund des hohen Anteils an intramuskulärem Fett.

Die Tiere werden in der Region geschlachtet. Das Fleisch wird während 4 Wochen am Knochen gereift (dry aged).

Ein Stück wiegt ca. 500 Gramm Tiefgefroren. Mindesthaltbarkeit: 6 Mte. Preis Fr. 9.-/100 Gr.
