Its origins date back over a thousand years to the plains surrounding Milan, near the town of Gorgonzola, from which the cheese takes its name. Today, Gorgonzola remains a cornerstone of Italian gastronomy, celebrated for its unmistakable character and refined balance of flavor.
Characteristics
Gorgonzola features a soft, creamy paste ranging from white to pale ivory, marked by the classic blue-green veins formed by Penicillium roqueforti. The rind is thin, slightly wrinkled, and naturally developed during aging.
Flavor ranges from mild and buttery (Dolce) to more intense and sharp (Piccante), depending on maturation.
