笊籬採是油長酒造獨家研究開發的上槽技術，將笊籬狀濾網沉入酒醪中，在近乎無加壓的狀態下自然分離清酒，並於不與空氣接觸的情況下採集酒液，有效避免香氣揮散與氧化，也不破壞旨味，完整保留酒醪原有的風味。
ALPHA 2 為全新設計後再啟動的作品，著重突顯仕込水的個性。「風之森」使用取自葛城山系深層地下、硬度超過250mg/L的日本屈指可數超硬水，透過將米的個性藉由高精米加以簡化，使鎂與鈣帶來的礦物感更加鮮明，展現清晰而立體的酒體結構。
原料米選用奈良縣都祁中西農園契約栽培、減農藥且品質特別優異的秋津穗，並將精米步合調整至40%，進一步提升酒體的透明感，最大限度地呈現仕込水細膩且鮮明的質感。
