What is chuck steak?
Chuck comes from the upper shoulder of beef and is produced from a hardworking section of the beast. It is full of connective tissue and has a delicious balance of fat and meat. Chuck steak is best suited to long, slow cooks as they bring out its great flavour and ensure the meat is juicy and tender.
How to cook chuck steak?
It is best to cook our diced chuck steak pieces at a low temperature for a long period of time to break down the fibres in the meat. Chuck is the perfect cut of beef for using in casseroles or slow-cooked pasta sauces. Using a slow cooker is an ideal way to cook chuck steak with plenty of braising liquid like wine, stock or tomato sugo with many aromats for extra flavour.
How to tenderize chuck steak?
The easiest way to make sure chuck beef is rich and tender is through long, slow cooking at a gentle heat. It is also possible to use a meat mallet to break down some of the muscle tissues. Coating a steak in a marinade can also tenderise the meat.
Chuck steak recipes
There are many wonderful ways to use this delicious cut of beef. A great way to use the meat is in a slow-cooked ragu. Sear on all sides in a hot pan, before braising in red wine, a little stock and some passata with a soffrito of onions, celery and carrot, creating a ragu to be served with tagliatelle. We also have a recipe for smoked beef chilli con carne which is incredibly flavourful - a hit when served with fragrant rice, guacamole and cheese.
