708km Trento DOC 2021 Extra Brut Blanc de Blanc nasce dalle terrazze vitate della Valle di Cembra, dove lo Chardonnay cresce su suoli porfirici a circa 550 metri di altitudine. Le vigne, coltivate a pergola trentina e guyot, offrono rese contenute che privilegiano precisione aromatica e struttura. La vinificazione prevede una pressatura soffice e una fermentazione lenta tra 15 e 17°C, mentre la presa di spuma avviene in bottiglia con un affinamento di almeno 40 mesi sui lieviti. Nel calice si presenta giallo paglierino brillante, con un perlage fine e continuo. Il profilo olfattivo unisce eleganti note di mela Golden a una marcata mineralità che richiama l’origine vulcanica del territorio. Il sorso è fresco, teso e lineare, con una chiusura persistente che conferma il carattere dello Chardonnay di montagna. Un Metodo Classico essenziale e rigoroso, capace di raccontare l’identità autentica della Valle di Cembra.
