Deze schuimwijn is niet zo maar een cava alike schuimwijn: hij weerspiegelt het terroir van de sherry regio in een vorm van bubbels. Zeer droog, ziltig en mineraal.

Parker 94

De wijngaard is de Corregidor (Carrascal Alto), één van de warmste wijngaarden van de regio van Jerez en tevens de wieg van een aantal fantastische sherry's die Willy Pérez al heeft geproduceerd. De stokken zijn >40 jaar oud en worden gesnoeid in 'moflete', dat is een snoeiwijze gebruikt bij oude stokken waar de klassieke 'Vara y pulgar' niet meer werkt.

De bodem is een albariza (kalk) bodem van het type Barajuela (een gelamineerde kalkbodem, waar de wijnstok bijzonder veel moeite moet doen om aan water te geraken en daardoor dus veel mineraliteit en ziltigheid meebrengt). 

Deze schuimwijn is een blend van 99% Palomino Fino en 1% Pedro Ximénez.

Opbrengst is 5000kg/ha wat laag is gezien de oude wijnstokken.

De druiven voor de schuimwijn worden geplukt begin augustus om maximaal de zuren te benutten.

De basiswijn is gefermenteerd op inoxe tanks bij een lage temperatuur en vervolgens 1 jaar gerijpt on 'flor' (gistlaag) op oude sherry vaten.

Na een jaar volgt de 2de gisting op fles (metodo tradicional) door toevoeging van een geconcentreerde most van Pedro Ximenez en gistcellen.

De 'mise sur latte' (rijping van de 2de gisting) duurt 3 jaar, wat gelijk is aan een Millésimé Champagne of Cava Gran Reserva.

De dégorgeage gebeurt zonder toevoeging van restsuiker (Brut Nature).

If you want an afforable, adjustable pillow - give this a try

I live this pillow. I bought two one for travel and one for home. I'm a side sleeper and most pillows are too fat for me, but my old pillow finally got too flat. It is very light and has an interior pillowcasing with a zipper under the main pillow zipper. Open both and access/remove the shredded foam (?) stuffing material. Be sure to save it in case you removed to much, I ended up putting some back in. It is slightly curved on one long end. It find it very comfortable, and there is no smell from the filling. I'm sensitive to stuff like that. I took off one start, as I wish it came with a pillow case just that size. It fits in a regular pillowcase sort of. The long side of this small pillow fits in the short end of a regular pillow case, but then you have all that extra length hanging over it, I asked my mom to cut and sew a few down for me.

Good shredded memory foam pillow. Great for traveling. Great for side sleeper. I have had neck and shoulder problems and went through a ton of pillows before settling on Luxome Layr adjustable pillow. But way too hefty to travel with. I bought three travel pillows for a trip I am currently on - this one, a sleep number one and Alkamto travel and camp Pillow. The Alkamto was a no-go right away. Too squishy. Little support. Loved the Nappler. My husband liked it too so ordered him one. I will say his came in and was not as full as mine. I had some leftover fill from my Layr pillow so filled it out a bit for him. He doesn’t need one as supportive as mine so it wouldve be fine. It is nice because if it’s too firm you can pull some filler out. Had I gotten the second first it still would’ve been the best but I’m glad mine was fuller. The sleep number came in the next day and way good but not as good. Gave that to my adult daughter. Returned the Alkamto one as useless. The Nappler rolls up pretty easy and compacts down well in its bag so I could fit in my carry on. Was good for the flight - a long flight with lay down seats but crappy pillows. I’ve used it instead of the hotel pillows and also now the cruise ship pillows. 5 days into travel and I’ve very pleased.
