Het huis maakt al sinds 1840 mousserende wijnen volgens de traditionele methode en is nog altijd de enige maison in Chablis die crémants de Bourgogne produceert. De dosage van 7 g/l houdt de stijl mooi droog. Wat betekent Brut bij mousserende wijn? Dat staat voor een droge stijl met een beperkte dosage na dégorgement.
Wijngaarden en regio
De herkomst van deze crémant ligt in het koele noorden van Bourgogne, precies waar spanning en zuren veel invloed hebben op de stijl.
- Ligging / Herkomst: Hoewel Crémant de Bourgogne in heel Bourgogne mag worden gemaakt, haalt Simonnet-Fèbvre voor deze wijn het merendeel van de druiven uit en rond Chablis. Dat noordelijke deel van Bourgogne geeft het fruit precies de frisse zuurlijn die zo goed werkt voor mousserende wijn.
- Bodem: De wijngaarden staan op jurassische mergel en kalksteen. Die klassieke Noord-Bourgondische ondergrond sluit mooi aan bij een crémant met spanning, finesse en lengte.
- Wijngaard: De gemiddelde leeftijd van de stokken is 20 jaar en het rendement ligt op 65 hl/ha. Dat past bij een stijl die levendigheid en regelmaat belangrijker maakt dan pure kracht.
- Regio-context: Crémant de Bourgogne kreeg zijn officiële AOC status in 1976. Daarmee hoort deze wijn bij een appellatie die al decennia de klassieke mousserende stijl van Bourgogne vertegenwoordigt.
Vinificatie en rijping
De kelderaanpak is hier volledig gericht op precisie, fijne mousse en een droge, harmonische stijl.
- Vergisting: De basiswijn wordt vergist in roestvrijstalen tanks. Daarna volgt de traditionele methode met een 2e vergisting op fles, waardoor de bubbels fijn blijven en de wijn zijn strakke, frisse lijn behoudt.
- Rijping / Flesrijping: De wijn rijpt 24 maanden, wat hem extra verfijning, een persistente mousse en meer lengte in de mond geeft.
- Dosage: Met 7 g/l blijft deze brut mooi droog, terwijl er net genoeg ronding overblijft om de wijn toegankelijk en evenwichtig te houden.
Druivensamenstelling
Deze blend combineert 2 klassieke Bourgognedruiven die elkaar in mousserende vorm heel mooi aanvullen.
- 60% Chardonnay – Bourgogne: Chardonnay geeft de wijn zijn frisse aanzet, citrusachtige lift en strakke lijn.
- 40% Pinot Noir – Bourgogne: Pinot Noir brengt extra breedte, structuur en een zachtere ronding in het midden van de smaak.
Proefnotities en serveertips
Lichtgeel in het glas, met fijne bubbels en een aanhoudende mousse. In de neus opent deze crémant fris en krachtig met citrus, gevolgd door een zachte, verfijnde smaak en een mooie lengte. De afdronk blijft levendig, droog en verfrissend.
- Serveertemperatuur: 6–8 °C werkt hier het mooist, omdat dit bereik de frisheid, fijne mousse en droge spanning mooi overeind houdt.
- Gerechten: Aperitief, gerookte zalm, oesters en andere schelpdieren sluiten hier prachtig op aan, omdat deze crémant genoeg frisheid en precisie heeft voor ziltige, verfijnde smaken.

Maison Simonnet-Fèbvre werd opgericht in 1840 en hoort bij de oudste wijnhuizen van Chablis. Het huis begon met Sparkling Chablis, de historische voorloper van de huidige Crémant de Bourgogne, en bouwde daar generaties lang op verder. Sinds 2003 maakt Simonnet-Fèbvre deel uit van Maison Louis Latour, maar het werkt nog altijd met een eigen stijl en blijft de enige producent in Chablis met een volledige lijn crémants de Bourgogne.

Amazing!

This book was phenomenal, I devoured it within a few days! For this being a debut novel, it is fantastic and I would’ve thought the author was a seasoned author. I have zero complaints about this book.
Let me start by saying that the world building was phenomenal. I could picture everything in my head because of how detailed it was — that’s how good it was written. And I absolutely love the “captive/captor” trope so much, it’s become one of my favorite tropes, so I was pleasantly surprised to see that this book had that.
I loved the banter between Rogue and Ara — they’re both snarky and witty, plus with the romantic tension, it made the dialogue that much better. Speaking of romantic tension, yes there is spice but not so much of it that it overrides the plot, which I loved. For me, this would probably be on the 3/5 level of spice.
This book had a ton of plot twists and I thoroughly enjoyed it.

High on Tropes and Satisfaction
Format: Kindle
This is a great Romantasy book full of action, adventure, and everything you look for in this genre.
I won’t lie: it does kinda feel like the author found every common trope from every successful book of this kind and threw them all into this novel. But if it ain’t broke, don’t fix it. Especially in romance, there’s a large audience who has specific expectations, and they want them every time. Nothing wrong with that and many times I’m one of them.

Tropes include:
Only one bed at the inn/bar
Dissatisfaction with life before hunk appears
Lost royalty
The chosen one
Montage of dress up time followed by shocked hunk
Forbidden romance between two from rival peoples
Power that cannot be controlled, simply guided/asked
Gathering intel at the inn/bar
FMC who knows how to fight/use weapons well
There’s probably more but no need to list them all.

OUTSTANDING
Format: Kindle
This was very, very good. The world is vast and characters are complex. There is a good plot with a whole lot going on. This is well written. Good twists and turns and some heart breaking moments. You will love these characters, they have heart and loyalty. I am hoping that there will be several more books. We've yet to see anything from the Sea Court but only a mention of them here and there. The Wood Court was given a quick couple of scenes, and only as far as some warriors, we've yet to enter their court and the Shadow Court, I'm not sure if they will be a force for good or bad, but they definitely will play a much bigger role moving forward. This is primarily the Ice and Air Courts. Told in multiple views, which I loved, it gives you a chance to see things from different eyes. There's alot of political maneuvering and deception. I loved it and will pick up the next book as it becomes available. If you like The Fae and the courts, you should love this. I think the author has mucn in store for us.

Definitely worth the read!

After taking a deep breath and taking in that wicked twist of an ending, I have finally composed myself. My first thought when I started this book was that I love Reyna's character. I was intrigued by her connection with her familiar and the Ruin that is plaguing her land. It came as no surprise that she took her sister's place in an attempt to protect her. When they reach the Air Court everything slows down. This is where it was iffy for me. First of all, I like multiple POV's in books however 7 is a bit much. It starts to interrupt the story line. I felt like I was finally making progress connecting with one character, then it was switched to another person. I felt they all had necessary or pertinent information but not necessarily were they all POV worthy. The only other thing that annoyed me was that Reyna constantly was " trapped." She would rush off without thinking, only to need rescuing. She is brilliant in a fight, but she really doesn't think through anything. Lorcan is amazing. I know he might be on the "bad" list, but his background is so interesting. Eislyn(Reyna's sister) is really so sweet, but calculating. I enjoyed her and Thane's dialogue. The author did an amazing job with the imagery in this book. Everything was so detailed it was easy to fall into the scene. I love unexpected twists and while part of the ending I expected, I wasn't expecting how it took place. All in all, I found it very entertaining and I am very invested in continuing this series.

Great Read!!! Great story!!!

The series is long, but Ms. Wolfhart does a fantastic job of weaving this tale while bringing so much to the characters. Surprises and plot twists along the way to keep you intrigued. There is some graphic sex, but is no way the focal point. Grammar was excellent (a rare find with a lot of self publishers) with only a few noted errors. I rarely give 4 stars, let alone 5.
