Herkomst en plantage
Waar de koffie zijn wilde oorsprong heeft - de regio Kafa, die zijn naam gaf aan deze koffie, ligt in het zuidwesten van Ethiopië. Hier groeit de koffie op een hoogte van 1.400 tot 2.100 m boven zeeniveau, grotendeels in het wild, in de diepe wouden van de provincie en bijna zonder menselijke onderschepping. Deze boskoffie wordt voornamelijk op natuurlijke wijze verwerkt, wat betekent dat de koffiekers wordt schoongemaakt en vervolgens in de zon wordt gedroogd.

Karakter en smaak
Ethiopische koffie heeft een pittige, sterke smaak, afgerond door een gemiddelde zuurgraad en een rijke, chocoladeachtige body. In tegenstelling tot zijn broer uit Sidamo heeft deze koffie een lichte zuurgraad, een evenwichtige smaak en een aangename fruitigheid.

Plantage info
Al geruime tijd is het voor de boeren mogelijk om in hun levensonderhoud te voorzien door koffie te verbouwen. Dit is te danken aan een slimme zakenman uit Freiburg, Duitsland, en zijn makkers. Ze proberen al jaren een evenwicht te brengen in de bossen van Kaffa om hun overexploitatie te voorkomen. Ze zijn erin geslaagd een bedrijf op te zetten dat het voor 6600 Ethiopische boeren en hun doorgaans zeer grote gezinnen mogelijk maakte om te ontsnappen aan de strijd om te overleven. De boeren uit deze regio plukken de "Forest Coffee" (ook wel "wilde koffie" genoemd) met de hand.
