  • Appellatie: Mercury, Côte Chalonnaise, Bourgogne, Frankrijk

  • Wijngaard: Les Marchands – zuidwestelijk gelegen perceel

  • Bodem: Kalkrijke klei en mergel, geeft structuur en mineraliteit

  • Klimaat: Koel Bourgondisch klimaat met optimale zonuren voor Pinot Noir

Een typische Côte Chalonnaise Pinot Noir, met elegante fruittonen en zachte tannines.

Vinificatie & Rijping

  • Handmatige oogst van optimaal rijpe druiven

  • Vinificatie in traditionele roestvrijstalen tanks

  • Maceratie van 12–15 dagen om fruit en aroma te extraheren

  • Rijping: 10–12 maanden op oude eikenhouten vaten, voor subtiele vanilletonen en een soepele structuur

I have purchased an additional copy to give my pastor for his birthday. If he has already read it, he can pass it on. I think pastors should read this every year or two to reassess their progress toward keeping these goals always in mind and in practice as much as possible.
