Al palato il vino è intenso e di medio corpo, ha una bella acidità e sapidità e un'ottima persistenza aromatica.Questo Terre Siciliane Zibibbo secco IGT “Gibelè” delle Cantine Pellegrino 1880 è uno zibibbo vinificato secco, le uve provengono da terreno vulcanico e argilloso della zona dell'Agro di Petrosino e di Mazara del Vallo. Dopo una vendemmia tradizionale e settembrina c'è una parziale macerazione delle uve, una pressatura soffice, la vinificazione a temperatura controllata e l'affinamento in bottiglia. Un vino in grado di esaltare il vitigno che gli dà vita, uno zibibbo davvero interessante.
Da accompagnare a piatti leggeri ma saporiti, crostacei e molluschi, noi lo consigliamo con seppie bianche marinate con gamberi rossi e carciofi.
