Sancerre “Mosaïque Calcaire” 2023 is een precieze, terroirgedreven Sauvignon Blanc die vooral draait om kalkrijke spanning en heldere fruitexpressie. In de neus tonen van rijpe citroen, limoen, groene appel en vlierbloesem, aangevuld met natte steen, krijt en een subtiele ziltige toets. In de mond is de wijn strak en energiek, met een zuivere kern van citrus en wit steenfruit, levendige zuren en een droge, minerale finale. De afdronk is fris, krijtachtig en zeer zuiver.

Vinificatie.
De druiven worden met de hand geoogst en zacht geperst. De vergisting verloopt spontaan met inheemse gisten, met minimale interventie om het karakter van het fruit en de kalkbodems te bewaren. De wijn rijpt vervolgens ongeveer 8 tot 10 maanden op de fijne lies, in een combinatie van cuves en grote, neutrale houten vaten (500–600 liter) om textuur te geven zonder nadrukkelijke houtinvloed. Na botteling volgt een korte flesrust om de wijn mooi te laten integreren.

Het domein.
Domaine Claude Riffault behoort tot de absolute top van Sancerre en staat bekend om zijn precieze, perceelgedreven stijl. Het domein werkt biologisch, met veel aandacht voor biodiversiteit, bodemgezondheid en handmatig werk in de wijngaard. In de kelder wordt zo weinig mogelijk gestuurd: natuurlijke gisten, zachte behandeling en een opvoeding die spanning en terroir centraal houdt. “Mosaïque Calcaire” is de elegante, kalkgedreven instap tot de stijl van het huis, met verrassend veel diepte en bewaarpotentieel.
