New school wijn maken in bordeaux. De cuvee Piverts is de nieuwste wijn van Bénédicte en Grégoire Hubeau die helemaal zonder sulfiet wordt gemaakt, niet tijdens de fermentatie nog bij botteling. Geen hout-gebruik, geen bombastische wijn die lange fles rijping nodig heeft maar een fijne energieke merlot opgevoed op betonnen eieren die zich nu heerlijk laat drinken!

Aan de rechter oever van Bordeaux, net westen van de beroemde appelaties Pomerol en Saint-Émilion vind je Fronsac. Hier verbouwen Bénédict en Grégoire Hubau Merlot op een atypische manier. In de eerste plaats omdat merlot-druif in de aangrenzende appelaties voornamelijk op klei en kiezels staan aangeplant. Het gevolg zijn de rijke en wulpse wijnen die men kent uit Pomerol en Saint-Émilion. In Fronsac staan de stokken, met een gemiddelde leeftijd van 65 jaar, op voornamelijk kalksteen bodem. Deze arme grond geeft juist hele fruit gedreven, mineralige maar vooral energieke wijn!

Bénédicte en Grégoire Hubeau komen niet uit een wijnmakers familie en genoten ook geen oenologische opleiding. De een was computer specialist, de ander chemicus. Ze komen oorspronkelijk uit het noorden van Frankrijk en starten in 1990  In het traditionele Bordeaux zijn ze een van de weinige die aan bio-dynamische landbouw doen en hun sulfiet gebruik matigen tot zeer kleine hoeveelheden enkel bij botteling.

I love this type of story. And omegaverse is one of my all time favorite genres. But there are a few things that pulled me out of my enjoyment while I was reading. It was repetitive at times as well as struggled with telling not showing. So we didn’t always feel like we were experiencing things with the main character. There were also some plot holes but they may still be answered in part 2. Now this isn’t to be said I didn’t enjoy parts of the story. I loved the almost instant love between Mila and Oliver. And how he started changing around her.
