Deze Bastilla is de droom van founder Lily – letterlijk. Na haar eerste bastilla in Marrakesh meer dan tien jaar geleden, kreeg ze hem niet meer uit haar hoofd. Traditioneel is het een Marokkaanse feesttaart, vaak gemaakt met duif (echt waar) en afgewerkt met poedersuiker (ook echt waar). Wij gaven er een plantaardige twist aan, met een subtiele zoetheid dankzij Luikse stroop.

Achter de krokante filokorst zit een royale vulling van gekaramelliseerde groenten: zoete aardappel, bloemkool, wortel en spitskool. Ze zijn zacht gekruid, opgefrist met een vleugje citroen en afgemaakt met geroosterde pijnboompitten en amandelschilfers. Het resultaat? Een rijk en verwarmend gerecht, vol vezels en gezonde vetten uit noten en olijfolie – tegelijk luxueus én voedzaam.

Serveer de bastilla warm of op kamertemperatuur, met couscous, een frisse salade of als deel van een groter Midden-Oosters buffet. Een blikvanger om van te smullen.
