Trapani heeft een aangenaam mediterraan klimaat, dat zich kenmerkt door zijn aangename zomers en koele, maar zelden koude wintermaanden. Wat wel opvallend is, is dat er nagenoeg geen neerslag valt in de zomerperiode.

vinificatie

100% Nerello Mascalese. Manuele pluk. Na voorzichtige persing volgt een koude maceratie en fermentatie in inox tanks gedurende 10-15 dagen. Malolactische gisting in dezelfde vaten. Een deel van de wijn wordt dan in grote houten vaten van 50 Hl gelagerd. Achteraf wordt alles terug geblend en gebotteld.
