The distillery s unique location, 700 meters above sea level, imparts a distinct character to its whiskies, shaped by the pure mountain water originating from the melted snow and rainwater of Mt. Kaikomagatake. This water, flowing through the Ojira and Jingu Rivers, combined with the cool, humid climate and clear air of the vast surrounding forests, allows for a slow and deliberate production process. The dedicated artisans at Hakushu employ traditional wooden washbacks during fermentation to retain heat in the cool mountain air, while carefully selecting a range of pot stills and casks to create an array of single malt whiskies that showcase the distillery s harmonious relationship with its environment, resulting in a perfect balance of time and nature in every drop. I have purchased an additional copy to give my pastor for his birthday. If he has already read it, he can pass it on. EVERY pastor needs to read this and practice these tips, which many do not receive in seminary. THIS is the type of pastor I want and need (and my pastor does embody much of what Peterson describes). I think pastors should read this every year or two to reassess their progress toward keeping these goals always in mind and in practice as much as possible.
