The fruit and the freshness stem from the meticulous care with which they handle their grapes. Picked by hand, the grapes are brought to the winery in 25kg capacity self-draining plastic boxes to prevent grape damage, and the juice possibly oxidizing, which would lead to a loss of freshness. The complexity comes from a very special technique, which involves autolysis of the yeast cells in the base wine for 3 months before bottling, and second autolysis of the yeast cells for a minimum of 15 months ageing in the bottle. Perfect with pasta drizzled in truffle oil, slow-braised meats, cured meat and cheese plates, oysters.
Appearance: Straw yellow in colour.
Nose: Aromas of citrus and nuts, with notes of savory and honey.
Taste: Extra dry, rich, light to medium-bodied, with flavours of citrus, nuts and biscuits; long and creamy finish on the palate.
