De appels rijpen gedurende 4 weken door in palletdozen. De appels worden daarna tot pulp vermalen en dan langzaam verticaal geperst. Daarna gisten ze langzaam zonder de toevoeging van suiker, zwavel of extra gist. Bij alle bewerkingen volgt men de maankalender en bij de botteling vindt

De gastronomische Cidre L’Extra Brut heeft een bijna oranje kleur en heeft in de mond een nobel bittertje, de frisheid van citrusvruchten en bloedsinaasappelen met een delicate mousse. Heerlijk te combineren met wit vlees of gevogelte met saus, een tarte Camembert, een hartige crêpe of een kaasje als Pont l’Evêque. Serveren op een temperatuur van 8-10 graden.
