Over Caiarossa

Het landgoed Caiarossa werd in 1998 opgericht in de glooiende heuvels van Riparbella, in Podere Serra All'Olio , op een landgoed van 70 hectare dat al eeuwenlang eigendom is van de familie De Medici.

Vinificatie

Elke perceel en elke druivensoort worden apart gevinifieerd in twee soorten vaten (betonnen en kegelvormige houten vaten), met langzame spontane gisting en zachte extractie. Na de malolactische gisting, volgt de assemblage van Caiarossa, dat vervolgens ongeveer 14 maanden rijpt in Franse eikenhouten vaten.
